　　桑华春：做三个实验四个指标，第一个指标就是极性标志物，做这个实验很简单，第一就是你取一个试管，向试管里面加6滴油，然后再加一毫升试剂，然后摇30秒，开水里面加热5分钟，然后拿出来。这个试剂盒里面有一个标准比色管，颜色比那个管子深或者是接近那么就是地沟油阳性，如果比较它浅就是阴性。第二个指标看食用油里面是否搀有动物油脂，就做一个凝固实验，可以在0-10度的冰箱里面放半个小时拿出来，看它是不是凝固了，如果凝固了的话，就可能是含有动物油脂，就可怀疑它为地沟油。第三个实验是检查两个成份，一个是水分，一个是酸价，地沟油这种劣质油它的水分和酸价有可能超标，这个实验也很简单，取个试管加一滴油再一毫升试剂摇10秒钟然后再放10分钟观察现象，这三个实验就做完，根据这四个指标来看，如果四个指标之一是阳性，我们就判它为地沟油，所有指标都检为阴性我们就判它是正常的食用油。

　　研发方负责人反复向记者强调，"检测试剂盒"的准确率并不是100%，只能作为初筛，如果需要进一步确认是否是地沟油，还需要精密仪器检测。在卫生部"盲检"的40个样品中，快检试剂的正确率80%，国际食品包装协会常务副会长董金狮认为，这样的检测只是模糊的评判。

　　董金狮表示，这种方法无法作为法律依据。

　　董金狮：我觉得一个方法是不是可行要经过卫生部门的食品安全评估委员会进行最终确定，但没有确定之前，如果推荐这种方法，不能作为执法的依据，也就是说即使你测出来是地沟油你对饭店也没有投诉的依据，也不能作为执法的依据。

　　持有相同观点的还有徐州工程学院食品工程学院副院长刘恩岐。刘恩岐说，这只能作为筛查的技术，起到震慑作用，但是判断它是地沟油还有一段距离。
